Mahi Mahi Tacos

Ingredients: Mahi Mahi (we use Trader Joes) 1/4 cup oil (olive, vegetable, canola) 1 tbsp chilli powder 1 minced jalapeño 1/4 cup chopped cilantro

Method: Set pan on medium heat. Mix the oil, chilli powder, jalapeño, & cilantro. Soak the Mahi Mahi in the mixture. Place Mahi Mahi on pan.



Ingredients for dressing:

Green cabbage 1/2 red onion, chopped 1 Roma tomato, diced 2 green onion, chopped 4 cloves of garlic, minced 1 cup sour cream



Keep the pan with the oil from the fish still heated, stick some corn tortillas in there & fry those up.

Wa-la! You've got some delicious tacos that may make you cry. Also, we added avacado for the top, as we love that on all food!

Brenner Mac Attack

Get your stretchy pants on! (Mama Brenner, you'd be proud). Alert your loved ones before eating this.


4 cloves garlic, minced 1/4 onion, diced 6-8 pieces of cooked bacon 1/4 lb grass fed beef ('cause we are watching our weight: hence the health conscious meal) --> made into meat balls 1/2 lb pepper jack cheese, shredded 1/2 lb cheddar cheese, shredded 2 tbs cream cheese 2 tbs butter, softened 6 cherry tomatoes, halved 1 10oz can cream of mushroom Rice elbow noodles Pepper to taste


-preheat oven 400 -Cook noodles -Cook bacon -Form 1 inch meat balls & cook in left over bacon grease 20131125-185905.jpg

-Layer half of noodles on bottom of dish. -Dump the mixture on top, spread equally.

-Bake for 15 minutes at 400.

Be prepared to sit for the rest of the night.

Grain Free Chocolate Chip Cookies

Preheat oven to 350

Mix: 8 TBS (1 cube) butter 2 TBS coconut oil (softened) 4 TBS pure maple syrup

Add 1/2 teaspoon vanilla 1 egg 1/2 teaspoon xanthan gum

Let sit 5 minutes - allows xanthan gum to settle in!

In another bowl Mix 3/4 cup almond flour 1/2 cup coconut flower 1/2 teaspoon baking soda 3/4 teaspoon sea salt

Stir the two together and wa-la! Ready for dark chocolate chips

I added 6 oz of dark chocolate chips but that might be too much or not enough for you. Be a honey badger & do what you want.

Bake for 10-12 minutes & eat them all or just one. Super tasty :)


Paleo update

So today reaches 1 month of eating Paleo! It has been an adventure of joy & excitement, a bit of crying (I make Loren's lunches and crave that cheese), and some disappointment. I have eaten so much bacon and about 10 dozen eggs. That's the truth.

Unfortunately, it did not fix my "intestinal issues" as we had all hoped. However, I do feel lighter, I don't cough all night, and I don't have searing sharp pains after each meal! I also don't feel AS bloated AS constantly. However, my intestines (sorry folks, just bein real here) are still very...picky? Irritable? Touchy? Let's just say, they don't like to "let things go."

I must say, I was so blessed by my church family & friends. Everyone made Paleo dishes for me and encouraged me. It was so cool!

As the weeks of eating Paleo went by I was becoming more and more discouraged. Not allowing grains, dairy, additives, legumes, or corn into your diet is tough when your favorite meals are tacos, pizza, and chicken Alfredo! Don't forget apple pie made by a very English woman in our church. Wow! Such a delight. I kept telling myself it would be worth it if I got healthy & "normal," if you know what I mean! I am feeling more healthy all around except know (the inestines. )

So many people have issues like this. I encourage you to remember that you're not weird! It is frustrating, yes! And real! You're not making it up. But we cannot let it consume us, becoming our focus, which is so easy. If you're like me, you've been attempting various things at any cost to fix it for years. (I've only been trying to tackle it for four). Here are some things you've probably tried:

Flax seed in everything eatable, caster oil, kombucha, tons of water, tons of coffee, no coffee, tons of fruits & vegetables, tons of fiber, not too much fiber, exercise a lot, exercise a little, exercise in general, apple cider vinegar, taking ex lax (I don't recommend this), taking docusate, taking a fiber laxative, chowing down tons of prunes, drinking prune juice, drinking aloe Vera juice (so gross), drinking MOMS (I don't recommend this), adding mirilax daily, taking a vegetable laxative, eating gluten free for months, eating Paleo, the list goes on. And it's exhausting.

Through it all, I have attempted & failed & attempted again to remember that Jesus is enough. That even if I feel bogged down with discouragement (this comes from my own brain) & discomfort, I am still able make disciples! To love God & those around me. But I must fight the urge to make my identity "unhealthy, pained, tired." I must take my focus off of self, which is difficult to do. I must make Jesus Christ my sole identity. My focus. Find joy through it all. Believe me, there is much to rejoice in, here in Corvallis! I read in Psalms two days ago something like this: My health may fail and my soul will grow weak, but my heart is always strengthened by God.

--- Another thought was that I had Endometriosis! The idea was that it was all over my intestines & colon, preventing anything from "moving" normally. So today I had a laparoscopy!

We can chat about that later. It was quite an experience with "leg warmers", memories from childhood, and an amazing husband!

Tastiest Spaghetti

This was the best spaghetti I have ever tasted & I MADE IT! Say whatt. Grain free, dairy free, corn free: paleo.


Ingredients & Method:

>2 tsp of olive oil in pan, medium heat > made some odd shaped "meat balls" with 1lb Italian Sausage from the farmer's market; brown them >dice small onion & 3 cloves of chopped garlic into the pan >dice medium tomato & add to pan >add 5 mushrooms >add 2 12oz cans of tomato paste >stir in some Italian seasoning to taste and if you'd like: oregano, basil, garlic powder, onion power >let simmer on low for 20 minutes, the longer the better! the flavors will just be beautiful on your palate >throw some cilantro in there!


>Boil a spaghetti squash in hot water until the squash flakes off & is translucent.

Sometimes You Just Don't Have Money

20130828-144244.jpg Sometimes when you are living and you are alive, you only have $0.16 left over for the last 10 days of the month & that is just the reality of this life. And sometimes, all of the time, that is okay! Because you have faith that God your provider will supply all your needs and you know that you will not die. As we spent the weekend munching on the crumbs of Doritos (not really, there were some half chips), slowly sipping the last ounces of milk (I dont even like milk), and searching the freezer every five minutes, we decided we should ask someone for some food.

First, however, was Sunday. And Sundays mean free coffee and tons of home-baked yummies from our Hospitality Team at Corvallis Church. You should come check us out :). So we went to church and consumed as much as possible (this is a horrible statement), then went home and passed out for about 5 hours. Our wonderful friends Jeff & Kaitlyn were planning on coming over later that evening for our condensed-young marrieds group. They asked if we should do a potluck style evening and Loren and I had to be spitting honest and tell them, "Sure, but you would be better off eating before you come. All we can offer is tea, cold coffee, and eggs with some tomatoes." The little gems they are. See that beautifully colored photo above? That is not even the half of what they brought us!

They even made this delicious dish of deliciousness: squash, potatoes, cheese, onions, olive oil. Just imagine it in your mouth and you will be in heaven. But in all honesty, if we had not been honest in the first place, how would the blessing have come? It is quite humbling to tell your friends you cannot offer them more than an egg and a tomato from your garden (honestly, we could have baked something but we were too lazy)...but it is such a beautiful thing when that humility turns into a bountiful of food. Or better yet, when that humility reminds you that the church is still the church...that the bride of Christ is still alive.

Not only did Jesus bring us food from our friends, but two days later I was given a check for a days worth of work that I have not yet worked. I was payed in advance! Not even asking for it. Can I say provision? What in the world or what in heaven, God is good. And we have no reason to doubt His promises.
